Burlington County College cooks up a Taste of Soul in honor of African American History Month

Chef Kevin Sbraga, winner of Bravo TV’s “Top Chef: Season 7,” and owner of Sbraga and The Fat Ham in Philadelphia, and Chef Tim Witcher, Culinary Educator at the Burlington County Institute of Technology (BCIT) and host of the Jersey Chef Cooking Show on YouTube, will be cooking up a “Taste of Soul” on Sunday, Feb. 23 in honor of Burlington County College’s (BCC) African American History Month programming.

Chef Sbraga, a New Jersey native and graduate of Johnson & Wales’ College of Culinary Arts, has received accolades for his no boundaries approach to cuisine. His modern American namesake restaurant, Sbraga, was named an Esquire magazine “Best New Restaurant” and one of Philadelphia magazine’s “Best Restaurants of 2013.” In addition to being the winner of the seventh season of “Top Chef,” Chef Sbraga also received the award for “Best Meat Presentation” in the 2008 Bocuse d’Or USA culinary competition.

Chef Sbraga will be demonstrating "Hot Chicken Wings,” a recipe from his Southern-inspired restaurant, The Fat Ham, at the event.

Chef Tim Witcher has an extensive career and has served as Executive Chef at several establishments including the Wyndham Hotel and the Wachovia Center’s suite catering and Lexus Club. A graduate of BCIT and The Academy of Culinary Arts in Mays Landing, Witcher returned to teach at BCIT and earned the 2012 teacher of the year award.

At the event, Chef Witcher will be demonstrating braised lamb with savory bread pudding and cucumber tomato herb relish.

“Cuisine is a very powerful tool that can break down many barriers like race, language, economic backgrounds, and ethnic diversities, and I'm proud to be one of its ambassadors,” Witcher said.

“A Taste of Soul” will be held at the Culinary Arts Center at BCC, 21 Mill St., Mount Holly. Guests may choose to attend one of the three seatings: 2 p.m., 4:30 p.m. or 6:30 p.m. Both chefs will attend each seating. In addition to the demonstrations, guests will also enjoy tastings of each dish.

Tickets are $25 general admission, $10 for BCC students with a current student ID and $8 for children ages 12 and under.
